The Ultimate Sweet & Savory Sandwich

For those days when you can’t decide between salty comfort food and a hint of sweetness, why not have both?

I originally thought this would work better as a video, but today is not a “film and edit” kind of day. So here we go, in writing!

Ingredients

  • 2 slices sourdough bread

  • Salted French butter

  • Sun-dried tomato jam (sweet)

  • Onion jam (homemade if possible, sweet)

  • Fresh arugula

  • Heirloom tomatoes, sliced

  • Pepper Jack cheese (2 slices)

  • 1 chicken thigh, skin on

  • 1 Honeycrisp apple

Seasoning:

  • Onion powder

  • Lawry’s seasoned salt

  • Garlic powder

Directions

1. Cook the chicken:Flatten the chicken thigh. Heat a little oil in a skillet over high heat. Place the thigh meat side down first, season with Lawry’s, onion powder, and garlic powder, and cover with aluminum foil (this helps it cook evenly).Cook until nearly done, then flip to the skin side and crisp until golden and crackling. Rest the chicken skin side up on foil so the inside finishes cooking without burning the skin.

2. Prepare the bread: Spread onion jam generously on one slice of bread, tomato jam on the other.

3. Slice the apple: Using a vegetable peeler, shave the Honeycrisp apple into thin ribbons.

4. Toast the bread: In the same pan (with the leftover chicken fat and seasonings), add a generous knob of French butter. Place the bread slices in the pan, jam side up, and toast until the bottoms are golden and fragrant.

5. Assemble the sandwich: Place the crispy chicken thigh on one slice of bread. Add two slices of Pepper Jack cheese on top and let it melt slightly.

6. Add the fresh layers: Top with heirloom tomato slices, arugula, and the apple ribbons. Cap with the second slice of bread.

And voilà, the perfect sweet-salty-crunchy bite in every mouthful. Serve warm, preferably with napkins, because things might get gloriously messy.
